2 strong tea bags
225g self-raising flour, sifted
1 tsp baking powder
Seeds of 4 crushed cardamom pods
Pinch of ground cinnamon
Pinch of ground nutmeg
60g reduced fat butter, diced
85g light soft brown sugar
Grated zest of 1 orange
1 egg, beaten
2 ripe bananas, mashed
Pour 150ml boiling water over the tea bags and steep for 5 minutes.
Mix the flour, baking powder and spices.
Rub in the butter and add the sugar and orange zest.
Stir in the beaten egg, warm tea and bananas.
Spoon into a lined 1-litre loaf tin and smooth the top.
Bake in the oven at 180°c, gas mark 4 for 45 minutes, until risen and firm to the touch.
Cool on a wire rack, then wrap in foil.
