Banana and cinnamon porridge

Porridge is a great way to start the day because it's high in fibre and low in GI. This means that you feel fuller for longer and are less likely to succumb to mid-morning hunger pangs. If you don't have any dates, you can use raisins instead.

Ingredients

85g Rolled porridge oats

240ml Water

240ml Skimmed milk or unsweetned soya or nut milk

A pinch of salt

1 Small banana, thinly sliced

40g Dried dates, chopped

Ground Cinnamon for dusting

2tsp Maple syrup

Method

Put the porridge oats, water, milk and salt in a non-stick saucepan and stir gently with a wooden spoon over a low heat until the oats start to soften. Turn up the heat and bring to the boil, stirring all the time.

Reduce the heat to a low simmer and cook gently for 2-3 mins until all the liquid has been absorbed and the porridge is thick and creamy.

Divide the porridge between 2 bowls and top with the banana and dates. Drizzle with maple syrup and dust with cinnamon. Eat while its still piping hot.
