Baked Egg in Avocado

This is the perfect snack to keep you fuller longer. Remember your first half an avocado is free the second half is 1 bite.

Ingredients

1 ripe avocado

2 eggs

sprinkle of salt

sprinkle of cayanne pepper

sprinkle of pepper

1 tsp chives

Method

Preheat the oven to 220ºC.

Slice the avocado in half, and take out the pit. Scoup out some of the flesh to allow the egg to fit in.

Sprinkle a pinch of salt, pepper & cayenne pepper onto the avocado and if desired you could even add a little squeeze of lime juice (optional)

Place the avocados in a small baking dish and then crack the eggs into the avocado halves.

Bake in the oven for 10-15 mins till the whites are cooked and the yolks are soft.

Remove from the oven, and season with chives, pepper and any other garnishes to taste.
