Baked Egg Casserole

This breakfast casserole can be refrigerated, and microwaved for 1 minute the following morning.

Ingredients

low cal spray oil

450g mushrooms, sliced

200g spinach

1/2 tsp salt & pepper

120ml salsa

6 eggs

120ml water

2 green onions, thinly sliced

Method

Preheat the oven to 190°C, and prepare a baking tray by spraying it with low cal spray oil.

Heat a frying pan with low cal spray oil over a medium heat. Add the mushrooms and fry them until they are tender, stirring occasionally.

Then, add the spinach and cook for 1-2 minutes. Season with salt and pepper.

Pour the mushroom and spinach into the baking tray, and spoon the salsa over-top.

Beat the eggs and water, and pour them over the mixture. Sprinkle the green onion on top.

Cook for 25 minutes, until the egg is golden brown in colour.
