180g uncooked oats
2-4 tbsps sweetener
1 tsp cinnamon
1/4 tsp salt
700ml hot water
2 egg whites, lightly beaten
6 apples
60g chopped pecans
0% Greek style yoghurt
Preheat over to 180 degrees. Combine oats, sweetener, cinnamon, and salt in a small saucepan. Add hot water and bring to the boil. Cover, reduce heat and simmer for 25 minutes or until water is absorbed. Turn off heat. Gradually whisk tempered egg whites into oats.
While oats simmer, trim a small slice off the top of each apple. Use a melon baller or small spoon to scoop out stem and core each apple, making the hole slightly wider at the top. (Be careful not to break through the bottom of the apple, or the filling will leak out when baking.) Place apples in a baking dish.
Divide oat mixture evenly among each apple, top with chopped pecans. Cover and bake for 1 hour.
Serve baked apples warm with 0% Greek-style yoghurt.
