Bailey Bombs

Ingredients:
- 8 light digestive biscuits
- 2 gelatine leaves
- 50ml Baileys
- 50g melted Low Low butter
- 1.5 tbsp boiling water
- 2 pots Quark cheese
- 2 egg whites, whisked
- Low cal hot chocolate
Method:
Break the biscuits up in to smooth crumbs by placing them in a ziplock bag and gently beating with a wooden spoon or rolling pin.
Melt the butter, either in the microwave or by placing it in a bowl over a pot of boiling water. Stir the biscuit crumbs into the melted butter.
Dissolve the gelatine in the boiling water, stirring well, then allow to cool. Gradually whisk the cooled gelatine into a bowl containing the quark.
Whip the egg whites until fluffy and gently fold into the Quark & Gelatine mixture.
Sprinkle 1tbsp of low cal hot chocolate powder into the mixture. Add in the Baileys and fold through the mixture gently.
In 8 small glasses, layer up the biscuit mix and quark mix, repeating twice. Chill for 2-3 hours until set. Decorate the top with a sprinkle of low cal hot chocolate powder.
