- low cal spray oil
- 1 tsp ground coriander
- 1/2 tsp tumeric
- 1 green chilli, chopped & de-seeded
- 1/2 tsp salt
- 1/4 tsp chilli powder
- 1 tsp cumin seeds
- 450g cauliflour
- handful fresh coriander
- 450g potatoes, diced
Parboil the potatoes in large saucepan of boiling water for 10 mins, drain well and set aside.
Heat the pan and coat with oil. Fry the cumin seeds for 2 minutes until they begin to splutter. Add the chopped green chilli and fry for a further 1 minute.
Add the cauliflower florets and fry, stirring it about for 5 mins.
Finally, add the potatoes and the ground spices and salt and cook for a further 7-10 mins or until both veg are tender.
Garnish with chopped coriander.
