Blueberry oat pancakes (FF)

Serves 8

Totally gluten free from switching out the regular flour and sweetened up naturally from the blueberries… yummmm

Mash 2 bananas in a large bowl until smooth. Mix in the 2 eggs and 1tsp vanilla until well combined, then mix in the 30g oats. Carefully fold in the blueberries.

Heat a nonstick skillet over medium heat.  Add a scoop of the pancake batter. Smooth out to form an even layer. Cook for 2–3 minutes until you start to see bubbles forming on the surface. Flip and cook until the other side is golden brown, 1–2 minutes more

 

3 Ingredient Vegan banana pancake (FF)

Serves 4

This vegan recipe is only 3 ingredients making it not only super convenient but so healthy too!

Add 3 cups oats, 2 ripe banana and 2 & 1/4 cups non diary milk to a blender and whizz together.

Heat a non stick pan on medium heat and add in your pancake batter.

Top with some extra banana and fruit of your liking.

Enjoy!
