60g Wild rice, cooked according to the instructions on pack
Fresh mint leaves
Fresh basil leaves
50g Cooked chicken or turkey pieces
6 Almonds roughly chopped
4 Dried apricots, roughly chopped
1 Teaspoon olive oil
Salt & Pepper
Cook the rice. Add the chicken, basil, mint, almonds, apricots and mix to combine. Add the olive oil and salt and pepper to taste. Mix well. This can be eaten hot for a main meal or made in advance as a handy lunch.
