1.5 tsps green pesto
2 x 30g slices wholemeal sourdough or multigrain bread
30g low-fat mozzarella, sliced
60g cooked turkey breast, sliced and skin removed
1 ripe tomato, thinly sliced
Salt and freshly ground black pepper
Low-cal oil spray
Our turkey pesto toastie will have you smiling and satisfied in only 11 minutes.
Spread the pesto over 1 slice of bread. Cover with overlapping slices of mozzarella and then a layer of turkey. Top with the tomato and season lightly with salt and pepper before topping with the second slice of bread.
Place the sandwich under the grill and cook until golden before turning and cooking the other side. Remove the toastie from the grill and cut in half on a board or plate.
Eat immediately while it’s still hot.
