Ingredients

4 Chopped chicken breast fillets

2 tbsp Green curry paste

1 Chopped onion

1 tin Reduced fat coconut milk

Mange tout

Chopped baby corn

Basmati rice

Crunchy green salad

Method

Spritz low-cal spray oil into a pan and brown off 4 chopped chicken breast fillets, along with 1 tbsp green curry paste and one chopped onion.

Add 1 tin reduced fat coconut milk to the pan along with another tbsp of curry paste and allow to simmer.

Before serving, add mange tout and chopped baby corn to the pan to soften slightly. Serve with 1/4 plate basmati rice and crunchy green salad.
