Summer Berry Chia Seed Pots
Delicious summer berry chia seed pots, super adaptable and easy to make. Something the whole family will love
- 1 large banana, mashed
- 4 tbsp chia seeds
- 300ml unsweetened soya milk or almond milk
- 2-3 drops of vanilla essence
- A pinch of ground cinnamon
- 1 tsp pumpkin seeds
- 100g strawberries, raspberries or blueberries
Put the mashed banana and chia seeds in a bowl and whisk in the milk until everything is well combined and there are no lumps of banana.
Set aside for 2–3 minutes, then whisk in the vanilla essence and cinnamon. The chia seed mixture should be starting to thicken already. Cover the bowl and leave to chill overnight in the fridge.
The following morning, the mixture should have thickened to a tapioca-like consistency. Divide it between 2 jars or bowls and top with fresh berries and pumpkin seeds.
