240g couscous
4 lean pork chops
2 garlic cloves, crushed
60g currants
a handful of parsely leaves, finely chopped
a handful of mint leaves, finely chopped
salt and pepper to taste
low cal spray oil
a pinch of paprika powder
a pinch of chilli powder
a pinch of onion powder
Boil a pan of water and add a sprinkle of salt. Cook couscous for 8 minutes or until cooked. Remove from heat and drain.
Meanwhile place pork chops, garlic, paprika, chili, onion, salt and pepper with a couple of sprays of low cal spray oil into a bowl. Toss ingredients to combine.
Heat a large pan over a high heat and add the seasoned pork, and cook, turning halfway, for 8-10 minutes or until cooked.
Place the couscous, currants, parsley and mint with a little low cal spray oil, in a bowl. Add in a little more salt and pepper, another pinch of paprika, chili and onion powder in a large bowl toss to combine. Divide the couscous amongst 4 plates, top with pork and serve.
