Spicy Chicken and Avocado Wraps

Ingredients

4 Chicken breasts, skinless, thinly sliced into chunks

Juice of 1/2 lime

1/2 tsp Mild chilli powder

1 Garlic clove, chopped

Low cal oil

4 Wholemeal tortilla wraps

1 Avocado, destoned and quatered

1 Roasted red pepper, sliced

Coriander sprigs, chopped

Method

Mix the chicken with the lime juice, chilli powder and garlic.

Heat the low cal oil in a non-stick frying pan then cook the chicken for 5-7 mins til brown.

Meanwhile, warm the wraps following the pack instructions.

Squash half an avocado onto each wrap, add the peppers to the pan and cook for 2 mins.

Pile the chicken & peppers onto the wraps, and sprinkle over the coriander.

Roll up, cut in half and serve.
