juice and zest of 1 lime
1/2 inch piece of ginger, grated
1 stick of lemon grass, sliced finely
2 cloves garlic, crushed
1 tsp soy sauce
1 mild, fresh, red chilli, deseeded
4 medium sized cod fillets
Mix together the lime juice, lime zest, ginger, lemon grass, crushed garlic, soy sauce and chilli. Place the cod fillets in a baking dish and cover with the lime mixture.
Tip: Leave to marinate in the fridge if you have time.
Cover with lid or foil and bake in a preheated oven (180C / 350F / gas mark 4) for around 20 minutes.
Serve with either 1/4 plate of basmati rice or baby new potatoes along with a side salad or steamed veggies like asparagus and snap peas.
