1 stick celery, finely sliced
14 (112g) apricots dried
140g chestnuts
2 onions, chopped
2 cloves garlic, chopped
1.5 glasses white wine
112g fresh wholemeal breadcrumbs
1/2-1 tsp chinese 5 spice
1 tbsp chopped parsley
Salt and fresh ground black pepper
Blanch the fresh chestnuts in boiling water for 2 minutes.
Drain and peel skins while hot and chop coarsely.
Dry fry onions and garlic in a non-stick pan until softened.
Add wine, celery, apricots and chestnuts.
Cook over a high heat for about 4 to 5 minutes stirring constantly.
Remove from heat and leave to cool.
Add breadcrumbs, spice, parsley, salt and pepper. Stir well.
Perfect for your Christmas day meal.
