1 Onion
3 Cloves of garlic
1/2 Red or green bell pepper
10 Mushrooms
1 Can of crushed tomatos
3 Boneless skinless chicken breasts
1/3 of a cup Olive oil
to taste Salt
1/4 plate Wholegrain rice or pasta
Pour about half of the olive oil into a frying pan, sauté the onion, pepper, garlic and mushrooms together. Add the crushed tomatoes and bay leaves and stir.
Simmer on medium-low heat for 10 minutes, stirring often. While tomato sauce mixture is cooking, pour other half of olive oil into a large frying pan and heat. Sprinkle salt on both sides of the chicken breasts and pan fry. Cook for about 10 minutes while turning every so often.
When cooked, slice the chicken breasts into thick chunks and place in pan with tomato sauce. Cover and cook over low heat for 10 minutes. Serve with wholegrain pasta or rice.
