Nothing says St Patrick's Day like Shamrocks! These cookies are the perfect treat to get the kids involved, they're easy and delicious. Use a shamrock shaped cookie cutter for extra effect.
- 250g Flour
- 175g Butter
- 75g Caster sugar
- 2 tbsp Cold water
- 1 Vanilla bean
- 2 tsp Vanilla extract
- 3 tbsp Matcha powder/Green food colouring
Place butter, flour and matcha powder into a bowl and rub together until the mixture resembles fine breadcrumbs.
Stir in rest of the ingredients , and 2 tbsp of cold water. Combine to form a ball. Roll out onto lightly floured surface until roughly 1cm thick.
Using cookie cutters, cut out approx. 40 cookies. Place onto a lined baking tray and bake in a preheated oven at 180C for 10- 12 mins until golden.
