Salmon & rocket pasta
Get three of your 5-a-day in one go along with healthy omega-3s and lots of protein with this filling dinner.
- 60g dry pasta, preferable wholegrain
- 1 fillet of salmon
- 2 handfuls of rocket
- a handful of mushrooms, sliced
- 1 lemon, zest and juice
- 100g garden peas
- 2 sundried tomatoes, chopped
- low cal spray oil
- salt and pepper
Cook the pasta as per packet instructions and drain. Dress the salmon in lemon juice and black pepper and place on a piece of foil under a hot grill for 10-12 minutes, turning about halfway through.
Meanwhile, spray the oil in a frying pan and add the peas and mushrooms. Saute for 5-10 minutes until they start to soften. Add all ingredients except the salmon to a bowl and mix well.
Top with the salmon and season with salt and pepper to taste and extra lemon juice if needed.
