100g Smoked salmon
1 Tbsp Lemon Juice
Half of a Lemon, Zested
1 Cucumber, sliced into rounds
Dill fronds, to garnish
In a food processor, blitz all the ingredients until you have a lovely smooth paste. Pop into a piping bag and refrigerate for a few hours to firm up. Pipe onto cucumber slices and garnish with some fresh herbs. Alternatively, you could pop the mixture into little ramakins and serve it with some melba toasts and a tossed salad for an elegant Christmas starter
