800g rhubarb
3 tbsp stevia or other granular sweetener
1 inch ginger, peeled & grated
Chop your rhubarb into 1/2 inch pieces, place into a saucepan and cover with the sweetener. Leave to sit for about 10 mins off the hob until rhubarb releases some liquid. Once this happens then you can place the saucepan on the heat and bring it to the boil, stirring occasionally.
Once the rhubarb has broken down with only a few whole pieces remaining, remove from the heat.
Place the grated ginger into a fine mesh sieve and with the back of a spoon press down to release the juice from the ginger. You should get about 1 teaspoon full.
Add this juice go the rhubarb and discard the pulp of the ginger.
Leave the compote to cool completely.
