Raspberry Cookies

Ingredients

90g rolled oats

90g wholemeal flour

1 tsp baking powder

1/2 tsp ground cinnamon

Pinch salt

1 egg

1 tsp vanilla extract

4 tbsp honey

2 tbsp coconut oil

12 fresh or frozen raspberries

Method

Whisk the oats, flour, baking powder, cinnamon and salt into a bowl.

In a separate bowl, whisk the coconut oil, egg and vanilla extract together and stir in the honey.

Add in the flour, stirring it until it is mixed.

Fold in the raspberries, and chill for 30 minutes.

Preheat the oven to 160°C and line a baking tray with a baking sheet.

Shape the cookie dough into 15 cookie shape and place on the baking sheet. Bake for around 15 minutes, until soft and golden.

Cool on the baking sheet for 15 mins, and then leave to cool on a wire rack until cooled down.
