200ml skimmed milk
3 tbsp pureed pumpkin
1/2 tsp vanilla extract
1-2 shot espresso or 230ml brewed coffee
a pinch of nutmeg
a pinch of cinnamon
a pinch of ground ginger
a pinch of cardamom
a pinch of all spice
stevia to taste
Blitz enough pumkin to make 3tsb of purree. In a cup or saucepan, mix together 120ml of skimmed milk, pureed pumkpin and coffee. Cook on medium heat until hot or microwave for 30-45 seconds.
Remove from heat, stir in vanilla, spices, and sweetener. Place in a cup and stir in 120ml of milk.
For a frothy topping blitz the remaining 80ml of milk for 30 seconds or until foamy in blender or frother, and then pour on top of your latte. Sprinkle with a pinch of cinnamon and Enjoy!
