Baby potatoes
1 handful of cherry tomatoes
2 courgettes, sliced into chunks
Low-cal spray oil
Sprigs of rosemary, chopped
6 cloves of garlic
1 red onion
Preheat the oven to 190 degrees.
Cook the potatoes in boiling salted water for 10 mins or until tender, then drain.
Spritz some low-cal spray oil in a large frying pan over a medium-low heat. Crush the drained potatoes up and tip into the frying pan. Fry for a couple of minutes.
Stir in the tomatoes, courgettes, red onion, then season. Add the rosemary and unpeeled garlic cloves, and spritz with low-cal spray oil.
Place in the oven and bake for 20 mins.
Enjoy the perfect Easter side dish.
