Pears Royale

Ingredients

4 small pears, pealed, halved & cored

150ml pomegranate juice

2 tbsp lemon juice

1 tbsp sweetener

2 tsp butter

Method

Preheat oven to 180C.

Set pear halves cut-side down in an ovenproof dish. Pour pomegranate and lemon juice over the top.

Sprinkle with sweetener and dot with a tiny bit of butter.

Bake, uncovered, basting occasionally with the pan juices, until the pears are tender and the juices have thickened slightly, about 45 minutes.

Let cool briefly before serving.

Serve with a dollop of yogurt and a light dusting of cinnamon for total oozing awesomeness 🙂
