One Pan Eggs Menemen

Ingredients

Low cal spray

2 Onions, sliced

1 Red or green pepper sliced thinly

1 Red Chilli, deseeded and sliced

1 Tin of chopped tomatoes

4 Eggs

Small bunch parsley, roughly chopped

6 tbsp Low fat natural yogurt

2 cloves Garlic, crushed

Method

Add a spritz of low cal spray to large saucepan and heat over medium-high heat.

Stir in the onions, pepper and chillies and cook until they begin to soften.

Add the tomatoes and allow to simmer. Cook until the liquid has reduced and season.

Using a wooden spoon, create 4 pockets in the tomato mixture and crack the eggs into them.

Cover the pan and cook the eggs over a low heat until just set.

Mix the yogurt with the garlic and seasoning.

Sprinkle the eggs with parsley and serve from the frying pan with a side of yogurt.
