4 Hake fillets
2 tins of tomatoes
2 courgettes, sliced
1 onion, finely diced
2 garlic cloves, crushed
1 white wine stock cube (optional)
2 tbsp dried basil
1 tbsp sweetener
240g Orzo pasta
100g cheddar cheese, grated
Olive oil
Preheat the oven to 220 degrees
In a large oven safe frying pan, heat some spray olive oil and fry the courgettes over a high heat, until they take on a nice colour. Remove from the pan and set
aside.
Add more spray oil, then cook the onions and garlic under a low heat until soft, about 5 minutes. Turn up the heat and add the tomatoes, basil, sweetener and wine stock cube and fill the tomato tin with water and add to the pan
Bring to the boil and allow to simmer for 20 minutes.
Season to your liking. Add the orzo, cooked courgettes and the fish and top with the cheese. Pop into the oven and bake for 20 minutes. Enjoy!
