Method

Heat a pot of water. Thickly slice the potatoes and boil them for 10 minutes, until they are slightly tender.

Finely chop the spring onions.

Cut the bacon into pieces, and fry the bacon until it turns pink.

Add the spring onions to the pan and stir to slightly soften. Put put the mixture into a separate bowl. Add the potatoes also.

Beat the eggs and add to the bacon, spring onions, potato mixture. Add 30g of grated cheese.

Heat the pan with low cal spray oil, and pour in the mixture. Stir for a few minutes until the base is set.

Preheat the grill at a high heat.

Leave the omelette to cook for around 6 minutes. Sprinkle the tomatoes and 30g grated cheese over top.

When the omelette is set on the base, but still eggy on top, put the pan under the grill to cook the rest of the egg mixture.

Cut into slices and serve
