Mexican Beef Lettuce Tacos

Ingredients

500g extra lean beef mince

1 small onion, finely diced

2 cloves garlic, minced

2 tbsp fajitas seasoning blend (or make your own-see method below)

2 tbsp tomato purée

Juice of ½ lime

2 heads of Baby Gem lettuce

1 avocado, sliced

handful of cherry tomatoes, chopped

1 red onion, finely diced

small bunch of fresh coriander, chopped

handful of Jalapeños

1 lime, cut into wedges

2 tbsp fat free Greek yoghurt

Method

To make your own fajitas seasoning blend, combine the spices below. Scale up and store in an airtight container to use in the future.

• 1 tsp ground cumin
• 1 tsp smoked paprika
• ½ tsp chili powder (or to taste)
• ½ tsp dried oregano
• ½ tsp sea salt
• ½ tsp black pepper

Prepare the Beef Filling:
Heat a non-stick pan over medium heat. Add the diced onion and garlic (use spray oil if needed) and cook until soft and translucent.

Add the Spices:
Add the minced beef to the pan and cook until browned. Stir in spices. Cook for 1–2 minutes to bring out the flavours.

Simmer:
Add tomato purée and 120ml Stir well and reduce the heat. Let it simmer for 5 minutes until thick and rich. Finish with a squeeze of lime juice.

Assemble the Tacos:
Spoon the hot beef mixture into lettuce cups. Top with chopped cherry tomatoes, diced red onion, avocado (if using), fresh coriander, jalapeños, and a dollop of Greek yogurt.

Serve:
Serve immediately with extra lime wedges for a zesty hit.

Top Tip:

Make your own taco seasoning using the spices above to keep it clean and free from hidden sugars or oils often found in shop-bought packets.
