2 eggs
low cal spray oil
1/4 of a large red onion, cut into wedges
1 tomatoes, chopped
6 black olives, pitted & halved
handful of parsley leaves
30g reduced fat cheddar
Heat a small pan over a high heat and spray with low cal spray oil. Fry the onion wedges for about 4 minutes. Throw in the tomatoes and olives for 1-2 mins until they begin to soften.
Whisk the eggs in a large bowl, add parsley and a pinch of salt and pepper.
Turn the heat down to medium and add the egg, stirring it until it begins to set. Sprinkle the cheddar on top and place the pan under the grill for around 5 minutes until it is puffed up and golden.
