Ingredients

4 60g wholemeal wraps, cut into triangles

2 handfuls Leftover Turkey

1 tbsp Taco or Fajita seasoning

1 tin black beans or kidney beans, drained and rinsed

120g Mature cheddar cheese

1 pack Cherry of Tomatoes, quartered

1 Red Onion, thinly sliced

1 lime, juice and zest of

Spray oil

To serve:

handful of Jalapeños

Freshly chopped corriander

2 Scallions, sliced

1 Avocado, sliced

Method

Preheat the oven to 220 degrees. Add your tortillas with some spray oil and bake for 10 minutes, shaking up the pan half way though. Meanwhile, spray a frying pan with oil over a high heat, add the left over turkey, back beans and taco seasoning until the turkey becomes nice and crispy.

Add the tomatoes, onion, lime juice & zest to the chicken and season, spoon the mixture over the tortillas, topped with the grated cheese and pop back into the oven until the cheese has melted, about 10 minutes.

 

Spoon over the jalapeños, coriander, scallions and one final squeeze of lime…then dig in!
