Lemon Pepper Oven Baked Salmon

Ingredients

1 darne Salmon fillet

1 tsp Black peppercorns

1/2 tsp Paprika

1/2 lemon Grated zest and juice of lemon

200g Baking potato

Steamed green vegetables of choice

Method

Boil water and cook pasta until soft

Meanwhile Pre heat oven to 180C and put the salmon fillet in a shallow ovenproof dish.

Crush the peppercorns and mix with the paprika and lemon zest in small dish

Squeeze the lemon juice over the salmon, then spoon over the pepper mix and press into the salmon.

Bake for 12 – 15 minutes, or until cooked through.

Serve pasta and your favourite vegetables.
