Lemon and Tuna Spaghetti

Ingredients

240g dried pasta

2 tins tuna in brine

1 head of broccoli

1 shallot, finely diced

10 black olives, sliced

1 tbsp caper, chopped

1 lemon

1 tbsp extra virgin olive oil

Salt and pepper

Method

Add water to pot and heat over high heat til boiling. Add a little salt.

Boil the spaghetti in salted water for 6 mins. Add the broccoli and boil for 4 mins more or until both are just tender.

Meanwhile, mix the shallots, olives, capers, tuna and lemon zest and juice in a roomy serving bowl.

Drain the pasta and broccoli, add to the bowl along with olive oil, finally diced Shallots and drained Tuna and toss really well with the spray oil and lots of black pepper.

Serve immediately.
