1 Corn Tortilla
Low Cal Spray Oil
1 Tomato Diced
1/4 Jalapeno pepper
1/4 Red Onion Diced
4 Medium Free Range Eggs
10 ml Semi- Skimmed Milk
Salt & Pepper
2 Tsps Coriander
Tabasco Sauce (Optional)
Half Avocado (Optional)
Heat a frying pan and add low cal spray oil. Pop the tortilla into it and fry both sides until slightly browned. Remove and set aside on kitchen paper.
Add tomatoes, jalapenos and onions to the same pan and cook for 5 minutes until softened.
In a separate bowl, whisk together the eggs, milk and a pinch of salt & pepper.
Add the eggs to the pan and gently fold into the tomato and onion mixture. Cook until eggs have scrambled.
Mix in the coriander, half an avocado sliced and splash on as much Tabasco as you can brave!
