Spray olive oil
Large onion
Tomato puree
Garlic clove
Tin of chopped tomatoes
2 Chicken stock cubes
Carrots, red pepper, celery, mushrooms and any other vegetables of your choice
Spray a large pot with the olive oil and heat, add in the garlic and chopped onion.
Chop all the other vegetables and slowly add to the pot. Mix stock cubes with the amount of water required and slowly add to the vegetables, bring to the boil.
Add chopped tomatoes and puree.
Add whatever herbs you may have in your cupboard; parsley, basil, italian herbs.
Let the soup simmer for about 25 minutes. Add black pepper before serving.
