360g wholemeal flour
120g plain flour
1 tsp baking soda
550mls buttermilk
Combine your wholemeal flour and plain flour in a bowl with a tsp of baking soda and make a well in the centre. Pour 550mls of buttermilk into the well and using one hand, stir in full circles. When it all comes together, place it on a well-floured surface.
Transfer to a baking sheet on a baking tray. Pat into an oval shape, about 2 inches in height and using a knife, mark an X across the top of the dough. Bake in a preheated oven at 180 degrees for 20 mins, before reducing the heat to 160 degrees for a further 30 mins. When it is done, it should be crusted on top but sound hollow when tapped.
