Healthy Coconut Mikado Balls

Ingredients

1 banana

2 eggs

1tsp vanilla extract

180g porridge oats

no added sugar jam

40g desiccated coconut

Method

A big thanks to our leader Sharon Gannon for this delicious recipe.

In a bowl, mash the banana before adding in 2 beaten eggs, the vanilla extract and the porridge oats. Mix all of the ingredients well.

Using your hands, form the mixture into about 18 small balls.

Bake at 180degrees for 18 minutes.

Place on a cooling rack and allow to completely cool before dipping into a bowl of no added sugar jam, then into the coconut.
