1 cube vegetable stock
160g frozen peas
6 baby leeks, finely chopped
1 garlic clove, crushed
4 slices smoked ham
120g extra light cream cheese
low cal spray
240g pasta
Cook the pasta in a saucepan of boiling water containing the stock cube, adding the frozen peas for the last 3-4 mins of cooking.
Drain the pasta & peas and set aside.
Heat some low cal spray in a large wok over medium heat, then cook the leeks & garlic for 2-3 mins.
Add the cheese and cook for an additional minute, then add the chopped ham, pasta and peas and toss all the ingredients together until the fully heated through.
Season with some sea salt & ground black pepper & serve.
