5 slices Lean bacon, diced
2 tbsp Sweetener
1/2 cup White vinegar
1 Egg
1/2 tsp Sea salt
1/2 tsp Mustard
1/2 dash Cayenne pepper
5 Large potatoes
1 Low cal spray
Serves 6
Free to choose
Spritz a pan with some low cal spray oil and gently cook your strips of bacon.
Once cooked, pat dry and remove all fat and rind.
In a small bowl, add eggs, salt, mustard, sugar, vinegar and cayenne pepper.
Beat well and pour into hot pan with bacon, stirring till thickened.
Add potatoes to pot boiling water and cook until softened.
Remove the potatoes and dice into chunks.
Add diced cooked potatoes with rest of salad.
Stir and serve hot.
Serve hot.
