4 medium potatoes, peeled and cut into cubes
Low cal spray oil
1 onion, sliced
Salt and pepper
Bag of baby spinach
12 cherry tomatoes, cut in half
4 large eggs
Place the potatoes in a saucepan with salted water and bring to the boil.
Reduce to simmer and cook until tender. (Or make extra if cooking potatoes the night before).
Meanwhile, heat a large non-stick frying pan and spray with the oil.
Add the onion and fry until softened, add the potatoes, fry until golden.
Fold in the spinach and cook until wilted.
Remove from the heat and make 4 wells in the mixture.
Crack an egg into each well.
Cover and return to a medium heat.
Cook until the eggs are done to your liking.
