2 carrots
1 red or white cabbage
1 tbsp lighter than light mayo
Lemon Juice
salt and pepper
parsley
Grate carrots and cabbage into a bowl.
Stir in lighter than light mayo with a squeeze of lemon juice and season with salt and pepper.
Top with some freshly chopped parsley.
TIP: For a spicy kick, add a tap of curry powder to the mix.
Serve on sandwiches, as a side to our Lovely Lasagne recipe or to accompany a crunchy salad.
