400g Cod fillets, or other white fish
120g Wholemeal bread, crumbed
1 Egg, whisked
1 Lemon, rind and juice
Salt and pepper
2 tbsp Lighter than ligh mayonnaise, for dipping
Preheat oven 200°C.
Cut the fish into long chunks. Break egg into a bowl and whisk.
Add your grated bread crumbs to a bowl.
Take the fish chunks and dip into the egg, and then into the breadcrumbs. Repeat this until the fish chunks are all evenly covered in bread.
Place the chunks on an oven tray and bake for 20 mins or until coating is golden.
Remove from tray and season with salt and pepper and lemon juice.
You can optionally serve this with some lemon mayo. Simply grate some lemon rind in to lighter than light mayo and add a few drops of lemon juice.
