Fake-Away Chicken Goujons

What is a chicken goujon, you ask? Well, really, it's very simple. It is a small portion of chicken breasts rolled in a spicy bread crumb coating. Children love them as any kind of finger food is a winner with them and we've got it on good authority that adults are very fond of them too. It's true you can buy them frozen in the shops but trust us when we say that they won't hold a candle to chicken goujons made the Unislim way. The recipe we use is simple and delicious but can be bumped up to something intensely satisfying and a lot more adult by using just a few tricks. Instead of mixed herbs use oregano, they will perfume the whole house and you will have keen folks around that table. If the chicken goujons aren't for children, you can give them a boost with some chili flakes thrown in with the crumbs, or you could get a bit playful and travel by mouth by using interesting spice mixes like garam masala. If you wanted to go really wild with this, you could brine the chicken breasts. Leave us a comment if it's of interest and we can add that step to the recipe if you like. While this is delicious served with a side of roasted vegetables or some wedges, we think these dippers come into their own as part of a warm salad with lots of crunchy greens and a zingy dressing.

Ingredients

3 chicken breasts, skinless and fat removed

2 slices wholemeal bread, shredded into breadcrumbs

1 egg

1 tsp Dijon mustard

1/2 tsp soy sauce

1 and 1/2 tsp dried mixed herbs

1/4 tsp black pepper

1/4 tsp garlic powder

Method
  • Pre-heat the oven to 180C
  • Cut the chicken breasts into pieces the size of your index finger.
  • Break the egg into a shallow dish whisk together with the mustard, and the soy sauce.
  • In another shallow dish, combine the breadcrumbs with all other dry ingredients, mixing well to combine.
  • Dip each piece of chicken into the egg mixture, and then coat generously with the breadcrumbs.
  • Place the prepared pieces on a greased baking sheet, and bake for 20-25 minutes, until the chicken coating is golden brown and the chicken cooked through, flipping each piece over after the first 15 minutes of baking.
