Eggs In Clouds
This easy peasy breakfast is so good, the whole family will want one.

Ingredients:
- 2 eggs
- pinch salt
- pinch black pepper
- 40g lean ham
- 1 tbsp chopped chives
Method:
Preheat the oven to 220˚C. Line a baking sheet with parchment paper.
Separate the eggs, and leave the yolks aside for now. Put the egg whites in a clean bowl and beat with a whisk until peaks form that hold their shape.
Fold in the chives, chopped ham, pepper and salt, taking care not to deflate the whites.
Divide mixture into two portions on a baking tray. Make a well in the middle of the egg whites with back of spoon and then place into the oven for 3 mins.
Take out of the oven & place the egg yolk in each well. Return to the oven for 5 mins if you want a soft yolk or 7 mins if you want a hard yolk.
