Cinnamon Shortbread Cup Cookies
This recipes makes approx 40 cookies at 1 bite each. Perfect as a cup topper on your Xmas Hot Choocy
- 250g flour
- 175g butter
- 1 tbsp orange peel
- 1 tbsp ground cinnamon
- 75g caster sugar
- 8g icing sugar
Place the butter and flour into a bowl and rub together until the mixture resembles find breadcrumbs.
Stir in the rest of the ingredients along with 2 tbsp of cold water and combine to form a ball. Roll out onto a lightly floured surface to a thickness of roughly 1cm.
Using Christmas shaped cookie cutters, cut out approx. 40 cookies. Use a sharp knife to cut an extra strip, about 3mm wide, from the centre of each cookie, or allow for it to sit on a cup.
Place onto a lined baking tray and bake in a preheated oven at 180C for 10- 12 minutes until golden.
Mix the cinnamon and icing sugar together and lithely dust. over the biscuits
