Ingredients: 4 cooked beetroots; 2 oranges; 1 bag of rocket; 1 small bunch of fresh mint; A drizzle of balsamic vinegar; 20g Pumpkin Seeds; 30g feta cheese

This delicious salad is the perfect side to any meal and works out at 5 Bites for the entire dish.

Ingredients

4 cooked beetroots

2 oranges

1 bag of rocket

1 small bunch of fresh mint

A drizzle of balsamic vinegar

20g Pumpkin Seeds

30g feta cheese

Method

Dice up the beetroot. Then, peel and chop the oranges.

Toss the rocket, the mint leaves, beetroots and oranges in a serving bowl.

Crumble the feta cheese walnuts over the salad and drizzle with some balsamic vinegar.
