1kg cooking apple, peeled, cored and diced
500g eating apples, peeled, cored, and diced
4 white onions, sliced
50g fresh root ginger, finely chopped
1 tsp black peppercorns
6 dsps artificial sweetener/stevia
250ml cider vinegar
500g fresh or frozen cranberries
Add all of the ingredients, except the cranberries into a large saucepan. Put on a low heat and stir gently, allowing the sweetener to dissolve.
Bring to the boil, before lowering the heat to allow the mixture to reduce without the lid, for 45 mins. Stir regularly so it doesn’t stick.
Once the apples and onions are tender & the mixture has thickened, add in the cranberries. Allow to simmer for 10 mins, you want them to soften, but not to burst.
Spoon the hot chutney in to sterilised jars and seal. Store unopened in a cool, dark place. The chutney will keep for up to 6 months.
