1 tbsp Milk
Salt and pepper
1 tbsp Grated cheddar cheese, reduced fat
5 Unislim wholemeal Tortilla chips
1 tbsp Salsa
1 tsp Reduced fat creme fraiche
Forever free salsa
1 Scallion, chopped
Beat egg and milk with a fork in a coffee cup, adding salt and pepper to taste.
Add the grated cheddar and whisk; stir to coat. Break 3 or 4 of your Unislim tortilla chips into small pieces to fit in the cup; stir into the mixture.
Microwave on high until done, about 1 minute, 10 seconds.
Remove from microwave and add a dollop of Forever Free Salsa and 1 tbsp of reduced fat creme fraiche and sprinkle with chopped scallions.
