Chinese Style Salmon

Ingredients

4 Salmon steaks

4 tsp Lemon zest

1 Garlic clove, crushed

1 tsp Chilli powder

400g Bean sprouts

200g Watercress

300ml Pineapple juice

Low cal spray

Method

Preheat oven to 180C.

Place salmon steaks on a baking tray and season them on both sides with salt and black pepper.

In a small bowl, mix together the lemon zest, garlic & chilli powder and drizzle over the steaks.

Bake the steaks in the oven for 9-10 mins.

Heat some low cal spray in a wok & cook the bean sprouts and watercress until just wilted, then add the pineapple juice.

Transfer the veg to serving plates and top with salmon steaks.
