Garlic Ginger Chicken Rice Bowl

Blend the garlic, ginger, orange and spring onions in a food processor.
Add the honey, soy sauce and vegetable oil, and give it a stir.
Soak the chicken in the mixture and leave to marinate for at least 2 hours. However, the flavours are best absorbed if you marinate overnight.
Thread the chicken, mushrooms, tomatoes, courgette and peppers onto wooden skewers.
Cook the kebabs under a hot grill or you could even cook on the BBQ for 10-15 minutes, until the chicken is cooked and brown. Turn the skewers frequently and apply more marinade as needed.
